Apple Cinnamon Oatmeal Muffins

INGREDIENTS

MUFFINS

  • 1 cup Bucking-Eh (Buck Wild) Oatmeal
  • 1 ½ cups all-purpose flour
  • ¾ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup milk or apple cider
  • ½ cup unsweetened applesauce
  • ¼ cup oil
  • 1 teaspoon vanilla
  • 1 cup finely chopped apple

STREUSEL TOPPING

  • ¼ cup  Bucking-Eh (Buck Wild) Oatmeal
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons brown sugar
  • 2 Tablespoons melted butter
  • ¼ teaspoon cinnamon

PREPARATION

  1. Preheat oven to 400F.
  2. Grease muffin tins.
  3. Combine  flour, oats, sugar, cinnamon, baking powder, baking soda, and salt in a large bowl.
  4. Whisk together the eggs, milk, applesauce, oil, and vanilla in a separate bowl.
  5. Make a well in the centre of the dry ingredients and add the wet ingredients, stirring just until combined.
  6. Fold in the chopped apple, then divide evenly between the 12 muffin cups.
  7. Combine all of the streusel ingredients together in a small bowl, then sprinkle over each muffin.
  8. Bake the muffins for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.
