Coffee and Vanilla Oatmeal Cookies feat. OG Ghee

INGREDIENTS

  • 4 cups Run of the Mill Rolled Oats
  • 1 cup Coffee and Vanilla OG Ghee
  • 1 3/4 cup all-purpose flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 1/2 cups packed brown sugar
  • 1/4 cup sugar
  • 2 large eggs room temperature
  • 4 tsp vanilla extract
  • 2 cups chocolate chips

PREPARATION

  1. Preheat oven to 350F.
  2. Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
  3. Beat the ghee, both sugars, eggs, and vanilla together until well mixed, in a large bowl.
  4. Add the flour mixture to your large bowl in 3 batches, mixing well.
  5. Stir in Run of the Mill Rolled Oats and Coffee and chocolate chips.
  6. Using an ice cream scoop, scoop the batter and place 6 cookies on a tray.
  7. Smash down cookies until they are 1/2-3/4 inch thick.
  8. Bake 10-12 minutes, flipping the pan half way, until they are light golden brown.
  9. Cool completely on the baking sheet, and enjoy!
