Stuffed Peppers

Stuffed Bell Peppers

Ingredients

  • 3 Red bell peppers
  • Olive oil
  • 1 Yellow onion
  • 4 Garlic cloves
  • 2 tbsp Tomato paste
  • 2 tsp Chili powder
  • 2 tsp Ground cumin
  • Sea salt
  • Pepper
  • 1.5 cup OatRice Pure
  • 1 cup Black beans
  • 1 cup Corn
  • fresh Lime juice
  • 1 cup shredded cheddar cheese
  • Guacamole (optional)

Preparation

  1. Preheat oven to 450degrees F.
  2. Place peppers, cut side up. Drizzle with olive oil, salt and pepper, then bake for 10min until tender.
  3. Heat olive oil then saute onion and garlic until softened. Add tomato paste, chili powder, cumin, salt, and pepper, and cook for 3 minutes.
  4. Remove from heat, and add rice, beans, corn, and lime juice.
  5. Fill peppers with rice mixture  then top with cheese.
  6. Broil for 5minutes until cheese melts.
  7. Top with cilantro and guacamole if desired.
