
Stuffed Peppers
Stuffed Bell Peppers
Ingredients
- 3 Red bell peppers
- Olive oil
- 1 Yellow onion
- 4 Garlic cloves
- 2 tbsp Tomato paste
- 2 tsp Chili powder
- 2 tsp Ground cumin
- Sea salt
- Pepper
- 1.5 cup OatRice Pure
- 1 cup Black beans
- 1 cup Corn
- fresh Lime juice
- 1 cup shredded cheddar cheese
- Guacamole (optional)
Preparation
- Preheat oven to 450degrees F.
- Place peppers, cut side up. Drizzle with olive oil, salt and pepper, then bake for 10min until tender.
- Heat olive oil then saute onion and garlic until softened. Add tomato paste, chili powder, cumin, salt, and pepper, and cook for 3 minutes.
- Remove from heat, and add rice, beans, corn, and lime juice.
- Fill peppers with rice mixture then top with cheese.
- Broil for 5minutes until cheese melts.
- Top with cilantro and guacamole if desired.
